Hot Cakes Preparation

Make the Batter
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients
In a separate bowl, whisk together the buttermilk and eggs until smooth.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; some lumps are fine.

Heat the Pan
Heat a non-stick skillet or griddle over medium heat and add 1 tablespoon of unsalted butter, allowing it to melt and coat the surface.

Cook the Hot Cakes
Pour 1/4 cup of batter onto the skillet for each hot cake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip and cook for another 1-2 minutes until golden brown.

Keep Warm
Transfer the cooked hot cakes to a warm plate or keep them in a low oven (200°F or 90°C) while you cook the remaining batter.
