Method

Cake

  1. 1

    Preheat the Oven

Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

  3. 3

    Cream Butter and Sugar

In another bowl, cream the softened unsalted butter until smooth, then gradually add the sugar until light and fluffy.

  4. 4

    Add Eggs and Vanilla

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.

  6. 6

    Bake the Cakes

Divide the batter between the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.

  7. 7

    Cool the Cakes

Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring to a wire rack.

Pastry Cream

  1. 8

    Heat Milk

In a saucepan, heat the whole milk over medium heat until it is steaming (do not boil).

  2. 9

    Whisk Egg Yolks and Sugar

In a bowl, whisk together the granulated sugar and egg yolks until combined.

  3. 10

    Add Cornstarch

Whisk in the cornstarch until smooth.

  4. 11

    Temper the Egg Mixture

Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling.

  5. 12

    Cook the Pastry Cream

Return the mixture to the saucepan and cook over medium heat, whisking constantly until thickened.

  6. 13

    Add Butter and Vanilla

Remove from heat and stir in the unsalted butter and vanilla extract until fully incorporated.

  7. 14

    Cool the Pastry Cream

Transfer the pastry cream to a bowl, cover with plastic wrap directly on the surface, and refrigerate until cool.

Chocolate Glaze

  1. 15

    Melt Chocolate

In a heatproof bowl, combine the semisweet chocolate and heavy cream.

  2. 16

    Heat and Stir

Place the bowl over a pot of simmering water (double boiler) and stir until the chocolate is melted and smooth.

  3. 17

    Cool Slightly

Remove from heat and let the glaze cool slightly before using.
