Preparing the Beer Battered Cod

    Make the Battering Mixture

    In a large bowl, whisk together the flour, baking powder, salt, and pepper. Gradually add the beer, stirring until the batter is smooth and free of lumps.

    Heat the Oil

    In a large heavy-bottomed pot, heat the oil over medium heat until it reaches 350°F (175°C). You can test it by dropping a small amount of batter into the oil; it should sizzle and float.

    Coat the Cod

    Pat the cod fillets dry with paper towels. Dip each fillet into the batter, allowing the excess to drip off.

    Fry the Cod

    Carefully place the battered cod fillets into the hot oil, cooking them in batches if necessary. Fry for about 4-5 minutes, until golden brown and cooked through. Remove and drain on paper towels.

Making the Homemade Tartar Sauce

    Combine the Ingredients

    In a small bowl, mix together the mayonnaise, dill pickles, capers, lemon juice, salt, and pepper. Stir well until fully combined.

    Cover the tartar sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

Assembling the Sandwich

    Toast the Buns

    Lightly toast the burger buns in a skillet or toaster until golden brown.

    Layer the Ingredients

    Spread a generous amount of the homemade tartar sauce on the bottom half of each bun. Place a piece of fried cod on top, followed by a slice of cheese, a leaf of lettuce, and a slice of tomato.

    Top with the other half of the bun and serve immediately while hot.
