Beer Battered Cod

    Prepare the Batter

    In a bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually pour in the beer while whisking until the mixture is smooth and free of lumps. Let it rest for about 30 minutes.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and float to the top.

    Fry the Cod

    Pat the cod fillets dry with paper towels. Dip each fillet into the batter, allowing excess to drip off. Carefully place the battered cod in the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Mix Ingredients

    In a small bowl, combine the mayonnaise, dill pickles, capers, lemon juice, Dijon mustard, salt, and black pepper. Stir until well blended. Adjust seasoning to taste and refrigerate until ready to use.

    Assemble the Sandwich

    Slice the burger buns in half and toast them lightly if desired. On the bottom half of each bun, place a lettuce leaf, followed by a fried cod fillet. Top with a slice of cheddar cheese, a slice of tomato, and a generous dollop of the tangy tartar sauce. Finally, place the top half of the bun on the sandwich.
