Method

For Buttermilk Hot Cakes

  1. 1

    Prepare the Batter

In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.

  2. 2

    Mix Wet Ingredients

In another bowl, whisk together the buttermilk, eggs, and vanilla extract until smooth.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.

  4. 4

    Cook the Hot Cakes

Heat a non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter. Pour 1/4 cup of batter for each hot cake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2 minutes until golden brown.

  5. 5

    Serve

Serve hot with butter and maple syrup.

For Texas French Toast

  1. 6

    Prepare the Egg Mixture

In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until fully combined.

  2. 7

    Dip the Bread

Heat a skillet over medium heat and melt 1 tablespoon of butter. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.

  3. 8

    Cook the French Toast

Place the soaked bread slices onto the skillet and cook until golden brown, about 3-4 minutes on each side. Add more butter as needed.

  4. 9

    Serve

Serve hot with syrup, powdered sugar, or fresh fruit.

For Toppings and Sides

  1. 10

    Cook the Meat

In a separate skillet, cook the bacon or sausage links according to package instructions until crispy. Alternatively, heat slices of ham until warmed through.

  2. 11

    Cook the Eggs

In the same skillet, crack the eggs and cook them to your desired doneness (scrambled, fried, or poached).
