Cut the Potatoes
Cut each potato into thin strips, approximately 1/4 inch thick. Try to keep the size consistent for even cooking.

Soak the Potatoes
Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

Heat the Oil
In a large deep pot or a deep fryer, add the vegetable oil and heat it to 350°F (175°C). Use a thermometer to ensure the oil reaches the proper temperature.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry thoroughly with paper towels. Removing moisture is key for achieving crispy fries.

Fry the Potatoes (First Fry)
Carefully add a handful of dried potato strips to the hot oil. Fry in batches to avoid overcrowding. Fry for about 4-5 minutes, or until they are soft but not browned. Remove and drain on paper towels.

Increase the oil temperature to 375°F (190°C). Fry the same potato strips again in batches for another 3-4 minutes, or until they are golden brown and crispy. Remove and drain on paper towels.
