Cooking the Rice

    Place the Korean rice in a fine mesh strainer and rinse under cold water until the water runs clear, about 2-3 minutes.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil over high heat, then reduce to low, cover, and simmer for 18-20 minutes until the water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.

Preparing the Vegetables and Eggs

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add minced garlic and ginger, sautéing for 1-2 minutes until fragrant. Add the julienned carrots and cook for another 3-4 minutes until tender.

    Stir in the blanched spinach and chopped green onions, cooking for an additional 2-3 minutes until everything is well mixed and heated through.

    In a separate non-stick skillet, heat 1 tablespoon of sesame oil over medium heat. Crack the eggs into the skillet, cooking sunny side up or to your desired doneness. Season with a pinch of salt if desired.

    In a large mixing bowl, combine the cooked rice with the sautéed vegetables. Add soy sauce and gochujang, mixing thoroughly to ensure everything is well-coated.
