    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes or until lightly golden. Remove from oven and let cool.

Filling

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and mix until creamy.

    Add sour cream and vanilla

    Add sour cream and vanilla extract to the mixture, blending well until smooth.

    Incorporate eggs

    Add eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.

    Finish the filling

    Sprinkle in the flour and mix gently until just incorporated.

    Bake the cheesecake

    Pour the filling into the cooled crust and spread evenly. Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.

    Chill the cheesecake

    Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight.

Strawberry Sauce

    Prepare the sauce

    In a medium saucepan over medium heat, combine fresh strawberries, granulated sugar, and lemon juice.

    Cook the sauce

    Cook for about 10-15 minutes, stirring occasionally until the strawberries have softened and the sauce has thickened slightly.

    Cool the sauce

    Remove from heat and let the sauce cool. You can blend it for a smoother texture or leave it chunky as per preference.
