    Bring 6 cups of water to a rolling boil in a medium pot. Add 1 tablespoon coarse kosher salt and the frozen edamame pods. Return to a boil and cook until bright green and tender, 4 to 5 minutes for standard frozen edamame (slightly longer if very large pods).

    Drain the edamame in a colander and immediately rinse briefly under cold running water or plunge into an ice bath to stop cooking if you prefer a firmer texture. Drain thoroughly and set aside in the colander so excess water can drip off.

Spicy Garlic Sauce

    Prepare sauce base

    While the edamame cooks, combine soy sauce, rice vinegar, mirin or honey, sesame oil, and sugar in a small bowl; stir until sugar dissolves. Set aside.

    Cook aromatics

    Heat a large skillet or sauté pan over medium heat. Add 1.5 tablespoons neutral oil and 1 tablespoon unsalted butter. When butter foams and oil shimmers (about 30 seconds), add the minced garlic and minced ginger. Sauté, stirring constantly, until fragrant and just beginning to turn golden, about 30–45 seconds — be careful not to burn the garlic.

    Add heat and seasonings: Immediately add 1 teaspoon red chili flakes and 1 teaspoon gochugaru (or smoked paprika). Stir for 10–15 seconds to bloom the chilies in the fat, releasing their aroma.

    Deglaze and finish sauce: Pour the pre-mixed soy sauce mixture into the pan and bring to a gentle simmer for 20–30 seconds, stirring to incorporate the browned bits. Add 1 teaspoon toasted sesame seeds and remove the pan from heat. Finish with 1/2 teaspoon fresh lime or lemon juice; taste and adjust seasoning — add up to an additional 1/4 teaspoon sugar or a pinch of salt if needed.

Combine and Serve

    Toss edamame with sauce: Add the drained edamame pods to the skillet (if your pan is too small, return them to the pot) and toss to coat evenly in the spicy garlic sauce. Cook over medium-low heat for 30–60 seconds just to warm through and let the flavors adhere to the pods.

    Finish and garnish: Transfer the sauced edamame to a serving bowl. Sprinkle with the sliced scallions, the remaining pinch (1/4 teaspoon) of chili flakes if you like extra heat, and an additional sprinkle of toasted sesame seeds or a light dusting of coarse kosher salt to taste.
