Make the Flavor Concentrate

Combine aromatics

In a small saucepan combine 1 cup filtered water, orange zest, grated ginger, and a pinch of ground cinnamon. Bring to a gentle simmer over medium-low heat.

Simmer 4–6 minutes to extract oils and aromatics, stirring occasionally. Do not boil vigorously; you want a gentle aroma release.

Remove from heat and let steep 10 minutes to further extract flavor.

Strain the liquid through a fine-mesh sieve or cheesecloth into a small bowl, pressing solids to extract as much liquid as possible. Discard solids and let the strained concentrate cool to warm (not hot).

Stir in 1 teaspoon vanilla extract, 1 tablespoon fresh lime juice, 1 teaspoon lemon juice, and 2 dashes cola bitters (if using). Taste and adjust — the concentrate should be bright, slightly spiced, and fragrant. Set aside to cool fully in the refrigerator (about 10–15 minutes) or use at warm but not hot temperature.

Make the Sweetened Soda Base

In a small bowl dissolve 2 tablespoons dark brown sugar and 2 tablespoons pure cane sugar in 2 tablespoons warm filtered water (use about 1–2 tablespoons warm water just enough to dissolve sugars). Stir until completely dissolved to make a simple cola syrup. If desired for mouthfeel, stir in 1 teaspoon powdered sugar to the syrup and dissolve.

Chill the sugar syrup in the refrigerator until cool (5–10 minutes) so it won't flatten carbonation when combined.

Fill a 16 oz (about 2 cups) serving glass with ice (if using). Pour 2 cups cold carbonated water into a chilled pitcher or directly into the serving glass.

Add the cooled sugar syrup to the carbonated water and gently stir once or twice to combine. Stir slowly to preserve carbonation.

Finish and Serve

Add 1–2 tablespoons of the prepared flavor concentrate to the sweetened carbonated water. Start with 1 tablespoon, stir gently, taste, and add the remaining tablespoon if you want a stronger, more authentic bottled-coke flavor. The balance should be sweet, with pronounced vanilla, citrus, and a touch of spice.

Taste and adjust: if too sweet, add a teaspoon of cold carbonated water; if too tart, add a small pinch of sugar dissolved in a few drops of warm water; if flat, use colder ingredients and fewer stirring motions next time.

Serve immediately over ice with 1–2 lime wedges. Optionally garnish with a thin orange wheel to echo the orange zest in the concentrate.
