Preparation

1. Marinate the Protein

In a bowl, combine the Dijon mustard, olive oil, minced garlic, lemon juice, salt, and black pepper. Add the chicken or lamb, coating it well. Let it marinate for at least 1 hour, or overnight for best flavor.

2. Cook the Rice

In a pot, bring 4 cups of water to a boil. Add 2 cups of white rice, reduce heat to low, cover, and simmer for about 18 minutes or until rice is tender and water is absorbed. Fluff with a fork and set aside.

3. Sauté the Onions

In a large skillet over medium heat, add a bit of olive oil and sauté the sliced onions until they are translucent and slightly caramelized, about 5-7 minutes.

4. Cook the Protein

Add the marinated chicken or lamb to the skillet with the onions. Cook for about 10-15 minutes on each side until the protein is cooked through and nicely browned.

5. Add Remaining Ingredients

Stir in the sliced carrots, olives, and chopped sorrel. Cook for an additional 5-10 minutes until the vegetables are tender and the flavors meld.

6. Serve

Serve the Yassa over a bed of rice, garnished with any extra olives or sorrel if desired.
