Directions
- 1
Prepare the Spice Rub
In a food processor, blend the roasted peanuts until they are finely ground. Add negro pepper, paprika, garlic powder, onion powder, salt, and black pepper. Pulse until combined and set aside.
- 2
Prepare the Chicken Wings
Pat the chicken wings dry with paper towels. This will help them get crispy when fried.
- 3
Season the Wings
In a large bowl, toss the chicken wings with the spice rub until evenly coated. Let them marinate for at least 30 minutes for the flavors to meld.
- 4
Fry the Wings
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Carefully add the marinated chicken wings in batches, frying until golden brown and crispy, about 10-12 minutes per batch.
- 5
Drain and Serve
Remove the wings from the oil and drain on paper towels. Serve hot with extra spice rub on the side if desired.
