Riz Gras and Grilled Lamb

Method

Preparation and Cooking

    Marinate the Lamb

    In a bowl, combine the lamb rack with olive oil, salt, black pepper, and lemon juice. Allow it to marinate for at least 30 minutes.

    Prepare the Tomato Stew

    In a large pot, heat 2 tbs of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent. Then, add the diced tomatoes and Akadi spice blend. Cook for about 10 minutes until the tomatoes break down.

    Cook the Rice

    Add the basmati rice to the pot, stirring to coat in the tomato mixture. Pour in the vegetable broth, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender.

    Grill the Lamb

    While the rice is cooking, preheat a grill or grill pan over medium-high heat. Grill the marinated lamb rack for about 15-20 minutes, turning occasionally, until medium-rare or cooked to your preference.

    Serve

    Fluff the rice with a fork and stir in the chopped coriander. Plate the rice alongside slices of grilled lamb, garnishing with additional coriander if desired.
