Preparation of Maïs Froufrou

Prepare the Vegetables
Finely chop the onion and tri-color bell peppers. In a large mixing bowl, combine sweet corn, chopped onion, and bell peppers.

Mix the Batter
In another bowl, mix together the all-purpose flour, cornstarch, Akadi spice blend, and water until a smooth batter forms.

Combine Ingredients
Add the batter to the corn and vegetable mixture. Mix until well combined.

Heat the Oil
In a large frying pan, heat vegetable oil over medium-high heat.

Fry the Mixture
Spoon the corn mixture into the hot oil, flattening them slightly with a spatula. Fry until golden brown and crispy, about 3-4 minutes per side.

Drain Excess Oil
Remove the fried fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
