Cooking Instructions
- 1
Prepare the Hibiscus Marinade
In a saucepan, bring 2 cups of water to a boil. Add the dried hibiscus flowers and let them simmer for about 10 minutes until the water is reduced to about 1 cup. Strain the liquid to remove the flowers and let it cool.
- 2
Marinate the Wings
In a large bowl, combine the hibiscus reduction, grated ginger, minced garlic, soy sauce, honey, salt, and black pepper. Add the chicken wings and toss to coat. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
- 3
Fry the Wings
In a deep frying pan or pot, heat the vegetable oil over medium-high heat. Once the oil is hot (about 350°F or 175°C), carefully add the marinated chicken wings in batches. Fry until they are golden brown and crispy, about 10-12 minutes.
- 4
Drain and Serve
Remove the wings from the oil and drain on paper towels. Serve hot, garnished with extra grated ginger if desired.
