Fufu Preparation

Preparing Cassava
Peel the cassava and cut it into smaller pieces. Rinse thoroughly under cold water.

Fermentation
Soak the cassava pieces in water for 2-3 days, changing the water daily. This process will allow the cassava to ferment.

Pounding Cassava
After fermentation, drain the cassava. Boil the cassava pieces in 4 cups of water until soft, about 20-30 minutes. Drain again and let cool slightly.

Making Fufu
Place the cooked cassava in a mortar and pound it until smooth and stretchy. If you don’t have a mortar, you can use a food processor or stand mixer. Add a pinch of salt to taste while pounding.

Serving
Once the fufu is smooth, form it into a ball and serve warm as a side dish with your favorite soup or stew.
