Alloco (Sweet Fried Plantains)

    Frying the Plantains

    1. Peel the ripe plantains and slice them diagonally into 1-inch thick pieces. 2. Heat the vegetable oil in a deep frying pan over medium heat. 3. Once the oil is hot, carefully add the plantain slices in batches, making sure not to overcrowd the pan. 4. Fry the plantains for about 2-3 minutes on each side or until they are golden brown. 5. Remove the fried plantains and place them on a paper towel to absorb excess oil. Sprinkle with salt.

    Making the Akadi Sauce

    1. In a blender, combine the tomatoes, onion, scotch bonnet pepper, and garlic. Blend until smooth. 2. In a saucepan, heat the vegetable oil over medium heat. Add the blended mixture and cook for about 10-15 minutes, stirring occasionally, until the sauce thickens. 3. Add salt to taste and cook for an additional 2 minutes. 4. Remove from heat and set aside.
