Prepare fresh rhizome

If using a fresh wasabi rhizome, trim the ends and any tough fibrous outer skin with a vegetable peeler or small knife. Rinse the rhizome under cold water and pat dry.

Grate wasabi

Grate the prepared wasabi rhizome on the finest side of a microplane or, traditionally, on a sharkskin grater (oroshi) until you have a smooth, almost paste-like heap (about 50–60 g grated yields a potent paste).

Mix to paste consistency

Transfer the grated wasabi to a small bowl. Add 2 teaspoons cold water, 1 teaspoon rice vinegar, and a pinch of salt. Stir with the tip of a spoon or small spatula until the mixture forms a smooth, slightly thick paste. Adjust water by up to 1 teaspoon if it's too stiff; add tiny amounts to avoid thinning too much.

Mature briefly

Let the paste sit uncovered at room temperature for 5–10 minutes to allow flavors to bloom (fresh wasabi’s peak heat develops over several minutes). Use within 15–30 minutes for best aroma and heat; fresh wasabi loses its vibrancy after an hour.

Storage

If you have leftover fresh paste, store it in an airtight container in the refrigerator for up to 24–36 hours. For best quality, press a piece of plastic wrap directly against the surface to limit oxidation.

Using Wasabi Powder (alternative)

Measure powder

Place 12 g of wasabi powder into a small bowl. This quantity will yield a similar amount of prepared paste to the fresh-rhizome method.

Hydrate and season

Add 2 teaspoons cold water, 1 teaspoon rice vinegar, and a pinch of salt to the powder. Stir briskly until a smooth paste forms. If it's too stiff, add water by 1/4 teaspoon increments until desired consistency is achieved.

Rest and serve

Allow the paste to rest for 5–10 minutes for flavors to develop. Serve immediately. Prepared powder-based paste will hold for a day refrigerated but will gradually lose aroma and heat.
