Prepare the Potatoes
Peel the Russet potatoes and cut them into thin strips to create classic fries. Rinse the fries in cold water to remove excess starch, then pat dry with paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Make sure there's enough oil to fully submerge the fries.

Fry the Potatoes
Carefully add the fries to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Season the Fries
While the fries are still hot, toss them with truffle oil, grated Parmesan cheese, chopped fresh parsley, salt, and black pepper until evenly coated.

Transfer the truffle frites to a serving platter and enjoy immediately.
