Method

Preparing the Lemongrass Steamed Cod

Prepare the Steaming Ingredients

Smash the lemongrass stalks and ginger with the back of a knife. Chop the garlic cloves.

Steam the Cod

Place cod fillets in a steamer basket. Sprinkle with salt, pepper, lemongrass, ginger, and garlic. Steam over boiling water for 10-12 minutes, or until cooked through.

Making the Moroccan Couscous

Prepare the Couscous

In a saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let sit for 5 minutes. Fluff with a fork.

Add Flavorings

Stir in raisins, chickpeas, cumin, cinnamon, and olive oil. Mix well and garnish with fresh parsley.

Making the Citrus & Dill Broth

Combine Ingredients

In a saucepan, combine vegetable broth, dill, lemon juice, and orange juice. Simmer for 5-10 minutes to blend flavors.

Preparing the Pickled Cauliflower

Pickle the Cauliflower

In a pot, combine vinegar, water, sugar, salt, and mustard seeds. Bring to a boil, then pour over cauliflower florets in a jar. Let sit for at least 2 hours or overnight.
