Preparation of Fish and Tartar Sauce

Prepare the Tartar Sauce

In a bowl, combine mayonnaise, chopped pickles, chopped capers, lemon juice, and salt. Mix well and refrigerate until needed.

Prepare the Batter

In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water until you achieve a smooth batter.

Heat the Oil

In a deep pan, heat vegetable oil over medium heat until it reaches 350°F (175°C).

Batter the Cod

Dip the Atlantic cod fillets into the batter, ensuring they are well coated.

Fry the Fish

Carefully place the battered cod into the hot oil. Fry for about 4-5 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Frites

Cut the russet potatoes into thin strips. Rinse in cold water and pat dry.

Fry the Frites

In the same oil, fry the potato strips until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, then season with salt.
