Method
Falafel Preparation

Prepare the Falafel Mixture
Soak the chickpeas overnight. Drain and combine with onion, garlic, parsley, cumin, coriander, baking powder, salt, and pepper in a food processor. Blend until smooth.

Shape and Fry
Form the mixture into small balls. Heat oil in a pan and fry the falafel until golden and crispy. Drain on paper towels.
Roasted Cauliflower

Roast the Cauliflower
Preheat the oven to 400°F (200°C). Cut cauliflower into florets, toss with olive oil, salt, and pepper. Roast for 25 minutes or until golden.
Make Tarator Sauce

Prepare Ghee
Melt ghee in a pan over low heat. Add cumin seeds, mustard seeds, turmeric, and red chili powder. Sauté for 2-3 minutes until fragrant.
Prepare Sofrito

Chop romaine lettuce and toss with olive oil, lemon juice, salt, and pepper.
