Fried Chicken

    Marinate Chicken

    Soak chicken thighs in buttermilk overnight.

    In a bowl, mix flour, paprika, garlic powder, salt, and pepper.

    Heat oil in a pan, bread the chicken, and fry until golden brown and fully cooked (about 12-15 minutes).

Buttermilk Waffles

    In a bowl, whisk together flour, baking powder, sugar, and salt.

    Mix Wet Ingredients

    In another bowl, whisk buttermilk, eggs, and melted butter.

    Combine and Cook

    Pour wet ingredients into dry and mix until just combined. Cook in a preheated waffle maker until golden.

Chorizo Gravy

    In a saucepan, cook chorizo over medium heat until browned.

    Add flour, stir for a minute, then gradually add milk, stirring until thickened. Season with salt and pepper.

Poached Eggs

Hollandaise Sauce
