Prepare the Soup

    Cooking the Beef

    In a large pot, add the cubed beef, chopped onion, minced garlic, water, salt, black pepper, and cumin. Bring to a boil, then reduce heat and simmer for about 1 hour or until the beef is tender.

    Adding the Kishk

    Once the beef is tender, gradually stir in the dehydrated kishk yogurt while continuously stirring to avoid lumps. Allow it to simmer for an additional 10-15 minutes.

Make the Zucchini Fritters

    Prepare Fritter Mixture

    In a bowl, combine grated zucchini, egg, flour, and salt. Mix well until combined.

    Fry the Fritters

    Heat oil in a frying pan over medium heat. Drop spoonfuls of the zucchini mixture into the pan and flatten slightly. Fry until golden brown on both sides. Remove and drain on paper towels.

Serve the Soup

    Ladle the beef and kishk soup into bowls, then top with wilted arugula. Serve with zucchini fritters on the side and lemon wedges for extra flavor.
