Burger Preparation

Prepare the Beef Patties

In a bowl, mix the AAA sirloin beef with salt and black pepper. Form the mixture into two equal patties.

Cook the Bacon

In a skillet over medium heat, cook the smoked bacon until crispy. Remove and drain on paper towels.

Cook the Patties

In the same skillet, cook the beef patties for about 4-5 minutes on each side, or until desired doneness.

Assemble the Burger

On the bottom half of the burger bun, spread a generous amount of babaganoush. Place the beef patty on top, followed by the crispy bacon, lettuce, tomato slices, and pickled onion. Top with the other half of the bun.

Prepare the Potatoes

Peel and cut the large potatoes into fries. Soak them in cold water for about 30 minutes to remove excess starch.

Season the Frites

Preheat the oven to 425°F (220°C). Drain and pat the fries dry, then toss them in a bowl with olive oil, salt, black pepper, and paprika.

Bake the Frites

Spread the seasoned fries on a baking sheet in a single layer. Bake for about 25-30 minutes, flipping halfway through, until golden and crispy.
