Prepare Gelatin
In a small bowl, sprinkle the gelatin over the water and let it sit for about 5 minutes until it becomes soft.

Heat Cream Mixture
In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring until the sugar dissolves and the mixture is warm, but not boiling.

Add Gelatin
Remove the saucepan from heat. Stir in the softened gelatin until completely dissolved. Add the vanilla extract and mix well.

Pour and Chill
Pour the mixture into individual serving cups or ramekins. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
Berry Sauce

Prepare Berries
In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice.

Cook Sauce
Cook over medium heat, stirring gently until the berries break down and the mixture thickens slightly, about 5-7 minutes.

Cool Sauce
Remove from heat and let the sauce cool to room temperature. Once cooled, you can strain it if you prefer a smoother sauce.
