Coffee Crème Brûlée

Prepare the Cream Mixture
In a saucepan, combine the heavy cream and brewed coffee. Heat over medium until steaming, but not boiling.

Whisk Egg Yolks and Sugar
In a bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

Combine Mixtures
Slowly pour the warm cream mixture into the egg yolk mixture while whisking continuously to temper the eggs.

Add Vanilla
Stir in the vanilla extract.

Chill
Remove from the oven, let cool, and then refrigerate for at least 2 hours or until ready to serve.

Caramelize the Top
Sprinkle brown sugar evenly over the top of each crème brûlée. Using a kitchen torch, carefully melt the sugar until golden and crispy.

Toast the Bread
Toast the bread slices until golden brown. Let them cool before proceeding.

Blend the Base
In a blender, combine the toasted bread, whole milk, heavy cream, granulated sugar, and a pinch of salt. Blend until smooth.

Chill the Mixture
Transfer the mixture to a saucepan and cook over medium heat, stirring constantly until it thickens slightly. Remove from heat and let cool, then refrigerate for at least 2 hours.

Churn the Ice Cream
Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency. Freeze until firm.
Vanilla Foam

Whip the Cream
In a mixing bowl, combine the heavy cream, vanilla extract, and powdered sugar. Whip until soft peaks form.

Serve
Transfer the vanilla foam to a piping bag for easy serving, or spoon it directly onto the plated dessert.
