Base Ingredients

Method

Preparation of Base

  1. 1

    Combine Ingredients

In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, vanilla extract, and a pinch of salt. Whisk together until the sugar is fully dissolved.

  2. 2

    Heat the Mixture

Place the saucepan over medium heat and warm the mixture until it is hot but not boiling, stirring occasionally to prevent sticking, about 5-7 minutes.

  3. 3

    Cool the Base

Remove the saucepan from the heat and let the mixture cool to room temperature, then transfer it to the refrigerator and chill for at least 2 hours, or until completely cold.

Flavors and Churning

  1. 4

    Add Flavoring

Once the base is chilled, decide on your flavor. For fruit gelato, add 1 cup of fruit puree to the base. For chocolate gelato, whisk in 1 cup of melted chocolate. For Nutella gelato, mix in 1 cup of Nutella. For coffee gelato, stir in 0.5 cup of strong brewed coffee. For nut-flavored gelato, add 0.5 cup of crushed nuts.

  2. 5

    Churn the Mixture

Pour the flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency, usually about 20-25 minutes.

Freezing

  1. 6

    Transfer and Freeze

Transfer the churned gelato to an airtight container, smooth the top with a spatula, and cover with a lid. Freeze for at least 4 hours, or until firm.
