Spicy Marinara Sauce
Method
Preparing the Calamari

Clean the Calamari
If using whole calamari, clean them by removing the head and innards. Rinse under cold water and slice into rings.

Prepare the Breading
In a bowl, mix together the flour, cornstarch, salt, black pepper, cayenne pepper, and garlic powder until well combined.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Dredge the Calamari
Toss the calamari rings in the breading mixture until evenly coated.

Fry the Calamari
Fry the coated calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
Making the Spicy Marinara Sauce

Add Tomatoes and Spices
Add the canned crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper to the saucepan. Stir well to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish the Sauce
Before serving, stir in the chopped fresh basil and adjust seasoning if necessary.
