Beef Tenderloin

Seasonal Vegetables

Method

Preparing the Beef Tenderloin

  1. 1

    Season the Beef

Take the beef tenderloin and pat it dry with paper towels. Rub the olive oil over the surface of the meat. Sprinkle salt, black pepper, and garlic powder evenly over all sides of the beef. Finally, sprinkle the fresh rosemary on top.

  2. 2

    Sear the Beef

Heat a large skillet over medium-high heat. Once hot, add the beef tenderloin to the skillet and sear it for 2-3 minutes on each side until browned.

  3. 3

    Finish Cooking

Reduce the heat to medium-low. Add butter to the skillet, spooning the melted butter over the tenderloin. Cook until the internal temperature reaches 135°F (medium-rare) or to your desired doneness, approximately 15-20 minutes.

  4. 4

    Rest the Meat

Remove the beef from the skillet and let it rest for at least 10 minutes before slicing.

Cooking the Seasonal Vegetables

  1. 5

    Prepare the Vegetables

Wash the asparagus and trim the ends. Peel and slice the carrots into thin rounds. Rinse the cherry tomatoes.

  2. 6

    Sauté the Vegetables

In a separate skillet, heat olive oil over medium heat. Add the carrots and sauté for about 5 minutes. Then add the asparagus and cherry tomatoes, seasoning with salt and pepper. Cook for an additional 5-7 minutes until the vegetables are tender but still vibrant in color.
