    In a large bowl, combine olive oil, rosemary, thyme, minced garlic, lemon juice, red wine vinegar, salt, and black pepper. Add the veal chops to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    In a saucepan, heat the beef or veal stock over medium heat. Reduce the stock by half until thickened, about 15-20 minutes. Stir in butter for richness and season with salt and pepper to taste.
