    Cook the Spaghetti

    In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.

    Prepare the Guanciale

    While the pasta cooks, cut the guanciale into small strips or cubes. In a large skillet over medium heat, cook the guanciale until it is crispy and golden brown, about 5-7 minutes. Remove from heat.

    Mix Egg Yolks and Cheese

    In a mixing bowl, whisk together the egg yolks and grated Pecorino Romano cheese until well combined. Add black pepper to taste.

    Combine Spaghetti and Guanciale

    Once the spaghetti is drained, add it to the skillet with the guanciale. Toss to combine, allowing the residual heat to warm the pasta.

    Create the Sauce

    Remove the skillet from heat and quickly add the egg yolk and cheese mixture, tossing vigorously to coat the spaghetti. If the sauce is too thick, add reserved pasta water a little at a time until the desired creaminess is achieved.

    Plate the spaghetti carbonara and finish with additional Pecorino Romano cheese and freshly cracked black pepper on top.
