    Make the Lobster Stock

    In a large pot, combine lobster shells and water. Bring to a boil over medium heat, then reduce to low and simmer for 30 minutes. Strain the broth and set aside.

    Sauté Vegetables

    In the same pot, melt butter over medium heat. Add onion, carrot, and celery. Sauté until softened, about 5-7 minutes. Add garlic and cook for an additional minute.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for 2 minutes. Pour in the white wine and bring to a simmer, scraping the bottom of the pot to release any bits.

    Combine Stock and Seasonings

    Add the reserved lobster stock to the pot along with salt, black pepper, cayenne pepper, and fresh thyme. Simmer for 20 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, transfer in batches to a blender and blend until smooth.

    Stir in the heavy cream and heat gently without boiling. Adjust seasoning to taste.
