In a large pot, combine lobster shells and water. Bring to a boil over medium heat, then reduce to low and simmer for 30 minutes. Strain the broth and set aside.

Stir in the tomato paste and cook for 2 minutes. Pour in the white wine and bring to a simmer, scraping the bottom of the pot to release any bits.

Combine Stock and Seasonings
Add the reserved lobster stock to the pot along with salt, black pepper, cayenne pepper, and fresh thyme. Simmer for 20 minutes.

Using an immersion blender, blend the soup until smooth. Alternatively, transfer in batches to a blender and blend until smooth.
