Prepare the Beef
Preheat your grill or oven to 400°F (200°C). Season the beef tenderloin with olive oil, salt, and black pepper. Rub the minced garlic cloves and fresh thyme all over the meat.

Cook the Beef
Sear the beef tenderloin on all sides for about 3-4 minutes until browned. Then, transfer it to the oven (if using) or continue cooking on the grill for about 20-25 minutes for medium-rare, or until desired doneness.

Rest the Meat
Once cooked, remove the tenderloin from the heat and let it rest for 10 minutes before slicing.

Prepare the Sauce
While the meat is resting, prepare your choice of Béarnaise or Cabernet sauce according to the recipe or package instructions.

Slice the beef tenderloin into thick slices and serve with the sauce of your choice on the side. Enjoy your Chateaubriand!
