Prepare the Potatoes
Wash and peel the potatoes. Cut them into evenly sized chunks, about 1-2 inches each, to ensure even cooking.

Preheat the Oven
Preheat your oven to 200°C (400°F). This will allow the potatoes to roast evenly and become crispy.

Prepare the Garlic and Herbs
Mince the garlic cloves and chop the fresh rosemary and thyme. Set them aside in a small bowl.

Combine Ingredients
In a large mixing bowl, combine the potato chunks, olive oil, minced garlic, chopped rosemary, thyme, salt, and black pepper. Toss everything together until the potatoes are evenly coated.

Roast the Potatoes
Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and fork-tender. Make sure to toss halfway through cooking for even browning.

Once cooked, remove the potatoes from the oven and let them cool for a few minutes. Serve warm as a side dish with your favorite main course.
