In a medium mixing bowl, combine the mixed olives, crushed garlic cloves, chopped fresh rosemary, and orange zest. This will create a flavorful base for your marinated olives.

Sprinkle in the red pepper flakes, salt, and black pepper. Stir the mixture again to incorporate the spices. Adjust the seasoning to taste, adding more salt or pepper if desired.

Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Let the olives marinate at room temperature for at least 30 minutes to allow the flavors to develop. For best results, refrigerate for a few hours or overnight.

Before serving, remove the olives from the refrigerator and let them come to room temperature. Serve in a small bowl as an antipasti dish, garnished with extra rosemary if desired.
