    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the Campanelle pasta and cook according to package instructions, typically about 10-12 minutes, until al dente. Once cooked, reserve 1 cup of pasta water and then drain the pasta.

    Prepare the Vegetables

    While the pasta is cooking, wash and chop the zucchini, bell pepper, and cherry tomatoes into bite-sized pieces. Mince the garlic cloves.

    Sauté the Garlic and Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Then, add the chopped zucchini and bell pepper, and cook for about 5-7 minutes until they begin to soften.

    Add Cherry Tomatoes

    Add the cherry tomatoes to the skillet and season with salt and black pepper. Cook for another 3-4 minutes until the tomatoes are just softened.

    Combine Pasta and Vegetables

    Add the drained Campanelle pasta to the skillet with the vegetables. Toss to combine, adding reserved pasta water a little at a time to achieve your desired sauce consistency.

    Add Fresh Herbs and Cheese

    Remove the skillet from heat and stir in the fresh basil and parsley. Sprinkle with Parmesan cheese and toss everything together until well combined.

    Serve

    Plate the Campanelle Primavera and if desired, top with additional grated Parmesan cheese and fresh herbs. Enjoy!
