    Prepare the Tomatoes

    Start by washing the fresh tomatoes thoroughly. Remove the stems and chop them into small cubes.

    Mix the Tomato Salad

    In a mixing bowl, combine the chopped tomatoes, fresh basil leaves, olive oil, balsamic vinegar, salt, and black pepper. Toss gently to combine all ingredients. Let this mixture sit for about 10 minutes to allow the flavors to meld.

    Prepare the Bread

    While the tomato mixture is resting, slice the crusty bread into thick slices, about 1 inch each. If desired, lightly toast the bread slices on a grill or in a toaster until golden brown.

    Assemble the Bruschetta

    Once the bread is toasted, place a generous spoonful of the tomato mixture on top of each slice. Crumble or slice the fior di latte cheese and place it over the tomatoes.
