Prepare the Filling
In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in garlic, ginger, cumin, coriander, paprika, salt, and black pepper. Cook for an additional 2-3 minutes until fragrant.

Make the Dough
In a bowl, mix 2 cups of all-purpose flour, ½ tsp of salt, and enough water to form a dough. Knead for about 5 minutes until smooth. Let it rest for 30 minutes.

Assemble the Sambusas
Roll out the dough into thin circles, about 4-5 inches in diameter. Place a spoonful of the meat filling in the center, fold the dough over, and seal the edges by pressing with a fork.

Fry the Sambusas
Heat oil in a deep frying pan over medium heat. Once hot, fry the sambusas until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.
