For the Tater Barrels

    Cook the Tater Tots

    Preheat your oven to 425°F (220°C) and spread the frozen tater tots on a baking sheet. Bake for 20-25 minutes or until golden brown and crispy.

    Prepare the Bacon

    While the tater tots are baking, cook the bacon in a skillet over medium heat until crispy. Remove from skillet and drain on paper towels. Once cooled, chop into small pieces.

    Cheese and Chive Preparation

    In a bowl, mix together the cheddar cheese, chives, and half of the bacon pieces. For the spicy version, mix the pepper jack cheese, jalapenos, and the other half of the bacon pieces in another bowl.

Assembly

    Shape the Tater Barrels

    Once the tater tots are baked, remove them from the oven and let them cool slightly. Using a fork, mash the tater tots together in a bowl to create a dough-like consistency. Form the mixture into barrel shapes.

    Fill the Barrels

    Take half of the shaped tater barrels and fill them with the cheddar cheese, chive, and bacon mixture. Fill the other half with the pepper jack cheese, jalapeno, and bacon mixture.

    Final Bake

    Place the filled tater barrels back on the baking sheet and return to the oven. Bake for an additional 10-15 minutes until the cheese is melted and bubbly.

    Serve

    Remove from the oven and let cool for a few minutes. Serve hot with a side of sour cream.
