6oz marinated skirt steak grilled with onions and poblano peppers. Two eggs any way. Choice of hash browns or home fries, and one liège waffle, tortilla, english muffin, croissant, tortilla or bagel.

    Marinate the Steak

    In a bowl, mix olive oil, salt, black pepper, and garlic powder. Coat the skirt steak with the marinade and let it sit for at least 30 minutes.

    Prepare the Vegetables

    Slice the onion and poblano pepper into strips.

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Grill the marinated skirt steak for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from grill and let it rest.

    Cook the Vegetables

    In the same pan, add a little more olive oil if needed and sauté the sliced onion and poblano pepper until they are soft and slightly charred, about 5-7 minutes.

    Cook the Eggs

    In a separate pan, cook the eggs to your preference (scrambled, fried, or poached).

    Prepare the Sides

    Cook the hash browns or home fries according to package instructions or your preferred method.

    Serve

    Slice the grilled skirt steak and serve it with sautéed onions and poblano peppers, the cooked eggs, hash browns or home fries, and a Liège waffle or choice of bread on the side.
