    Prepare the Bacon Jam

    In a skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels, reserving the fat in the skillet. Add brown sugar, apple cider vinegar, and hot sauce to the skillet and cook until thickened. Chop the bacon and stir it back in. Set aside.

    Make the Balsamic Reduction

    In a small saucepan, bring balsamic vinegar to a simmer over medium heat. Reduce heat to low and let simmer until the vinegar thickens slightly, about 10-15 minutes. Set aside.

    Cook the Scallops

    Pat the scallops dry and season with salt and black pepper. In a skillet, heat olive oil over medium-high heat. Once hot, add the scallops and sear for about 2-3 minutes on each side until golden brown and cooked through.

    Assemble the Dish

    Place two scallops on each plate, top with a generous spoonful of spicy bacon jam, and drizzle with balsamic reduction.
