    Tap the maple trees and collect the sap in clean containers. This is usually done in early spring when the temperatures are above freezing during the day and below freezing at night.

    Boiling the Sap

    Pour the collected sap into a large, wide pot or evaporator. Heat the sap over a fire or stove, bringing it to a rolling boil. Maintain the boil and continue to cook until the sap reduces.

    Concentration Process

    Continue boiling the sap until it reaches a temperature of approximately 219°F (104°C), which indicates it has concentrated enough to become syrup.

    Filtering

    Filter the hot syrup through cheesecloth or a fine mesh strainer to remove any impurities or particles.

    Bottling

    While still hot, pour the syrup into sterilized glass bottles or jars. Seal them tightly and allow to cool.
