Prepare the Pork
In a large bowl, mix together the apple cider vinegar, brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the pork shoulder. Let it marinate for at least 1 hour.

Cook the Pork
Place the marinated pork shoulder in a slow cooker. Pour in the apple whisky and ketchup. Cover and cook on low for 8 hours, or until the pork is tender and easily pulled apart.

Prepare the Sauce
Once the pork is done, remove it from the slow cooker and shred it using two forks. In the slow cooker, mix in the diced green chiles and shredded gouda. Return the pulled pork to the slow cooker and mix well.

Assemble the Sandwich
Toast the burger buns lightly. Place a generous amount of the pulled pork mixture on the bottom half of each bun. Top with pickled red onions and the top half of the bun. Serve immediately.
