For the Liège Waffles

Rest the Dough
Cover the dough with a cloth and let it rise for 1 hour or until doubled in size.

Cook the Waffles
Preheat the waffle iron. Cook the dough in the preheated waffle iron until golden brown and crispy.
For the Lemon Mousse

Bloom the Gelatin
In a small bowl, combine gelatin powder and water. Let it sit for 5 minutes.

Make the Mousse
In a separate bowl, whip the heavy cream to soft peaks. In another bowl, mix lemon juice and sugar, then gently fold in the whipped cream and the bloomed gelatin.
For the Bavarian Cream

Bloom the Gelatin
In a small bowl, combine gelatin powder and water. Let it sit for 5 minutes.

Layer the Components
On a plate, place a Liège waffle, add a layer of lemon mousse, followed by Bavarian cream. Repeat for two more layers.
