    Prepare the Pork

    In a slow cooker or pot, place the pork shoulder, chopped onion, minced garlic, green chiles, cumin, salt, and pepper. Add enough water to cover the pork. Cook on low for 6-8 hours or until the pork is tender and easily shredded.

    Cook the Eggs

    In a skillet, cook the eggs to your preference (scrambled, fried, or poached). Season with salt and pepper.

    Assemble the Dish

    Once the pork is cooked, shred it with two forks. Divide the hash browns or home fries onto plates. Top with shredded green chile pork, cooked eggs, shredded cheddar cheese, avocado slices, and chopped cilantro.

    Serve with a Liège waffle or choice of bread on the side. Enjoy!
