    Prepare the Potatoes

    Wash the Russet potatoes thoroughly. Cut them into thin strips, about 1/4 inch thick. Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    After soaking, drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.

    In a large, deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.
