    Prepare the Filling

    In a mixing bowl, beat the duck eggs. Add the shredded cabbage, julienned carrots, chopped green onions, soy sauce, minced garlic, grated ginger, salt, and black pepper. Mix until well combined.

    Assemble the Eggrolls

    Place an eggroll wrapper on a clean surface with a corner pointing towards you. Spoon about 2-3 tablespoons of the filling mixture onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Repeat with remaining wrappers and filling.

    Fry the Eggrolls

    In a deep frying pan or pot, heat oil over medium-high heat. Once the oil is hot, carefully place the eggrolls into the oil, a few at a time, and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

    Serve the duck eggrolls hot with sweet and sour sauce for dipping.
