Prepare the Duck
Rub the duck quarters with salt, crushed garlic, thyme, and black peppercorns. Cover and refrigerate for at least 24 hours.

Cook the Duck
Preheat the oven to 225°F (107°C). Rinse the duck quarters under cold water to remove excess salt, pat dry. In a large oven-safe pot, melt the duck fat over low heat. Submerge duck quarters in the fat and ensure they are completely covered. Cook in the oven for 4-6 hours until the meat is tender.

Crisp the Skin
Remove duck from the fat and let cool slightly. Heat a skillet over medium-high heat and place duck skin-side down. Cook until skin is crispy, about 5-7 minutes.
