Mousse Preparation

    Melt the Chocolate

    In a heat-proof bowl, melt the dark chocolate over a pot of simmering water (double boiler) until smooth. Remove from heat and let cool slightly.

    Whip the Cream

    In a separate bowl, whip the heavy cream until it forms soft peaks. Be careful not to overwhip. Set aside.

    Separate the Eggs

    Separate the egg yolks from the whites. Place the egg whites in a clean bowl.

    Beat Egg Yolks

    Add the granulated sugar to the egg yolks and whisk until pale and creamy. Stir in the melted chocolate and vanilla extract.

    Using a hand mixer, whip the egg whites with a pinch of salt until stiff peaks form.
